Crockpot Baked Beans With Leftover Pulled Pork

Anytime I make up a batch of Pulled Pork we end up with leftovers; generally lots of leftovers. Finding things to do with all of this leftover meat has been a challenge. I came up with this recipe when Naomi and I went to a dock potluck last year and realized that we really didn't have much to bring, and we really didn't want to go out to the market. I had a big zip lock bag full of pulled pork in the freezer, and a couple of tins of beans in the pantry. Naomi was concerned that nobody would like a huge bowl (think nearly 7 pounds) of beans, but I assured her that it "would do". It ended up that they were cooking sausages on the grill at the pot luck, so the beans were a natural, and damn good, I brought the pot home empty!

Ingredients:
  • 2 55 oz. cans of Bush's Homestyle Baked Beans
  • 3 cups pulled pork
  • 2 tablespoons Chimayo Sunset Rub
Directions:
Combine ingredients together in a large crockpot and heat on high for at least 4 hours before serving. Yield: 7 pounds (serves everybody)
