Sweet Potato Pie
Ingredients:
- ¼ cup butter
- ½ cup brown sugar
- 1 cup (2 large sweet potatoes, cooked and mashed)
- 3 eggs
- ⅓ cup clear corn syrup
- ⅓ cup milk
- ½ teaspoon salt
- 1 teaspoon vanilla
Directions:
- Preheat oven to 425°
- Cream together the butter and sugar. Add mashed sweet potatoes and slightly beaten eggs. Mix well.
- Combine with syrup, milk, salt and vanilla. Put into unbaked pastry shell. Bake in 425° oven for 10 minutes, reduce heat and continue baking 35 to 45 minutes until knife inserted one inch from edge comes out clean.
