Grilled Mussels with Mignonette Sauce
3 pounds mussels, scrubbed and debearded
2 tablespoons olive oil
Salt and freshly ground pepper, to taste
4 lemon wedges
½ teaspoon freshly cracked pepper
1½ tablespoons minced shallots
¼ cup champagne vinegar
¼ cup white wine vinegar
¼ teaspoon salt
1. Prepare a fire for grilling. Discard any mussels that you can easily open or do not close when tapped with a spoon, place others in a bowl with olive oil, salt and pepper. Toss to coat.
2. Place mussels on a cast-iron griddle and position it on the grill rack of the grill. Season mussels with salt and cover grill. Cook until mussels open, about 4 minutes.
3. Remove griddle from the grill and squeeze lemon wedges over mussels.
4. To make Mignonette Sauce, combine ingredients in a bowl; serve with mussels. Serves 6.
